B - The abc of Food Cooking and People - Bass

           Bass is a popular ocean and freshwater fish that belongs to the Serranidae and Centrarchidae families. It is valued as both a food fish and a sport fish, with different varieties found in rivers, lakes, and coastal waters. Some species are known for their firm, white flesh, while others are prized for their strong fight when caught by anglers.

One of the most well-known freshwater bass species is the Black Bass (Micropterus dolomieu), a game fish popular among anglers. It is known for its aggressive behaviour and strong resistance when hooked. Another freshwater species is the Largemouth Bass (Micropterus salmoides), which has a wide, gaping mouth and is highly sought after in sport fishing competitions.

In the ocean, Black Sea Bass (Centropristes striatus) is harvested in the Atlantic, especially along the eastern coast of North America. It has a mild, slightly sweet flavour and is commonly grilled, baked, or pan-fried. The California White Bass (Cynoscion nobilis), also called White Seabass, is a large ocean fish related to the weakfish, commonly caught along the Pacific coast.

Some bass species are small freshwater fish, like the Calico Bass (Pomoxis spariodes), which is found in lakes and rivers. It is smaller than other bass species but still appreciated for its mild taste and flaky texture. The Silver Bass (Roccus chrysops), also known as White Bass, is found in the Great Lakes and is known for its silvery scales and firm meat.

The Striped Bass (Roccus lineatus) is an important ocean food fish, which is also farmed due to its high demand in markets and restaurants. Another related species is the Red Drum (Sciaenops ocellatus), which is fished in southern rivers and coastal waters. It has a mild flavour and firm texture, making it a popular ingredient in Southern and Cajun cuisine.

Overall, bass is a versatile fish that is enjoyed for its delicate flavour, firm texture, and adaptability in cooking. Whether grilled, baked, fried, or used in stews, it remains a favourite among seafood lovers and fishing enthusiasts.
