B - The abc of Food Cooking and People - Baltimore Crab

            Baltimore crabs are a beloved local specialty featuring steamed Atlantic blue crabs from the Chesapeake Bay. These crabs, known for their sweet and delicate meat, are traditionally cooked with a spicy seasoning mix that includes chilli peppers. A popular choice for seasoning is Old Bay, a famous blend of hot and savoury spices like celery salt, mustard, paprika, cloves, and ginger, which gives the crabs their distinctive flavour.

The local crab season runs from April to December, when crabs are harvested fresh from the Chesapeake Bay. During the off-season, crabs from the southern United States are often used to maintain supply. Despite the seasonal variation, the preparation and enjoyment of Baltimore crabs remain a cherished tradition in Maryland.

Baltimore’s crab houses and restaurants are famous for serving this delicacy, with Obrycki's, established in 1865, being one of the most iconic spots. The crabs are served whole, generously coated in spices, and spread out on tables covered with brown paper. Diners are provided with paper towels, mallets, and crab knives to enjoy the experience of cracking open the shells and extracting the delicious meat.

Eating Baltimore crabs is a hands-on experience that requires a bit of effort and patience. The process begins by prying off the “apron” on the underside of the crab’s body, then removing the top shell. The grayish lungs and eyes are discarded to expose the white membrane covering the meat. The claws, legs, and backfins are removed, and the body is broken in half lengthwise to access the backfin meat, which is prized for its tenderness. The claws are cracked with a mallet, and the meat is pulled out and savoured.

This communal style of dining, often accompanied by cold beer, is a fun and social tradition that embodies the spirit of Baltimore’s seafood culture. Families and friends gather around tables, laughing and chatting as they work through piles of crabs, making it as much about the experience as it is about the meal.

Baltimore crabs are more than just a dish—they are a symbol of Maryland pride and a celebration of the region’s rich seafood heritage. For locals and visitors alike, a crab feast in Baltimore is an unforgettable culinary experience.
